Michelin-starred chef and restaurateur Angela Hartnett wants to know why, as an island surrounded by waters rich in fish and seafood, we are so reluctant to eat what we catch?

Why does more than 75% of what’s landed get sent straight to markets in Europe – so that we go on holiday to Spain and France and Italy to eat the British catch in restaurants there.

Why do we seem to be missing a fish culture and bravery in trying less familiar dishes that go beyond fish and chips?
